So the concept of this sounds stupid to most people, but I do it all the time. Would I improve racing if I used a controller? Obviously skill is involved, but if I'm serious about racing would I be better off switching to a controller?

You will be better in general. You will improve faster, be more consistent etc.
Its not impossible to race with keyboard. Someone won an entire championship using only keyboard and I myself use keyboard and got good results. I'd really recommend a controller if you have one though.

It'd def help if/when you get used to it. I'm an avid keyboard user myself and can't for the life of me get used to racing with a controller but I'd still love to.. need to just practice more, it's just I generally don't have the patience.. couple fails and I throw the controller away and finish the race with keyboard lol

I think you can get very very near results with a keyboard, I myself use a keyboard and have been racing with people with controllers for a long time and don`t feel the need to switch to the controller as the game is very arcade in this perspective. Maybe you`ll get 0.100ms faster after a long time practising with a controller, not sure though.

I have always used keyboard for GTA without any issue. The biggest advantage a controller will offer is being able to control the throttle at rates between 100% and 0%.
The ideal way to steer with a controller is to flick the stick - tapping a keyboard button is essentially the same thing in that regard.
People will always have preference and superstition though.

------- Not to go off topic - racing with keyboard gives you less precision and control when it comes to input, but is definitely manageable. You might not be able to get the full potential out of the game by using keyboard, but it still can be enjoyable. More gain is in lines taken, than in technicalities or exact smoothness in the corner, so wouldn't worry too much.

The only thing I don't like about keyboard is that there's no way to control the throttle, you're either coasting or full throttle, no inbetween. In rest it's nice since I can do tiny adjustments quite fast. Plus I never used a controller in my entire life so

Controllers have throttle and brake on the trigger buttons. Those buttons have a gradient of 0-100% depending on how hard you hold it down.
