If I could go back and tell myself what cars to start out with I'd say 9F and Massacro on city and hill tracks. 9F and the Massacro are very different to drive and can be difficult for different reasons. That said you will most likely find the stable understeering Massacro more appealing than the snappy oversteering 9F.
Don't go practice too much in easy areas such as LSIA, Zancudo or Grapeseed. Go drive in the hills and in Los Santos - and don't go for the long popular tracks. Try and see if you can find shorter tracks to practice on.
You may ask about Muscle and Super cars, and my opinion is that the Sports class is the good middle ground to start of with, then you can go for high speed super cars and sliding muscle cars later.

Recommendations like Dominators or 9f sound just cocky and are useless for beginners. Being used to the Dominator does not mean you can drive every other car as well. In the end, you have to learn every car for itself, so using a wide variety of cars will help. If you are new to the game then it is a good idea to get some of the easier cars for each class as your main car and have one or two alternatives that drive differently. For muscles, I would say the Ruiner is a good car for starters. Since you can't avoid Dominators in muscle car races, it may be a good idea to get used to the regular Dominator before switching to the Pisswasser Dominator. For sports, I would recommend the Feltzer or Jester for beginners. The Sultan with its AWD is good pick for an alternative car. For Supers ... yeah, well the Vagner, right? If you want a car that isn't stupidly OP then the Osiris is a good choice. It will serve you well but will also tell you when you screw things up. As alternative pick I would recommend the Zentorno, as it drives completely differently and is AWD.

I think that most people there just don't get that Jimmy (and it's nothing against him) needs to learn what racing is in general. He needs to learn racing lines, braking points etc. He doesn't need to drive a difficult car to learn the basics

His question was "Best car to learn with?" and we delivered the best cars to learn with I'm just giving you an insight to Jimmy's situation because I raced with him a couple times in his playlist and I think it was pretty helpful for everyone. Maybe JimmyFantastic should say what he has already achieved and what he wants to achieve with this playlist he is planning to host... And to be honest, I think that the car you are learning with should be relevant to your racing skills. I obviously don't want to underestimate Jimmy but he should really say his opinion.

The 3 main classes are supers, sports, and muscles.
For a beginner the Nero Custom is one of the most all around balanced and easiest to drive cars in the game, and it's capable enough, not quite top of the class but it's in that top 10 tier. If you can afford it, then I really can't think of a better beginner super car.
Sports car I would go with the Jester or Jester Racecar. It's AWD, fast, good in corners, again another all around greatly balanced car.
Now muscles is a tough one. This is really a 2 car class, you either go with the Pisswasser Dominator for the top end speed, or the Dukes for the cornering ability. Both cars will fit better in different situations and are usually the only two you'll see on the track. However I can't say either is really beginner friendly. Dominator will slip out easily if your not taking corners perfectly. Meanwhile the Dukes is a pretty big and square car, and if you hit anything at speed it tends to do almost a movie style front flip. Both are rear wheel drive as well. I'd say Dukes is easier to drive, but the Dominator you'll probably get more out of in general, but only if you can master it.
