I only have a few race-specific cars. Vagner, X80, Tezeract and a GP1. First two see most of the action.
Pariah is my sports car obviously. I actually think it handles appropriately for how fast it is. I also have a Comet, a Shlagen and a few Elegy Retro customs but only race those when I'm in an amateur-ishlobby.
Shotaro for bikes and Sanchez for offroad.
Just picked up a Bandito (the RC truck) but haven't been in any of the races in public yet. Been too busy screwing with players. I did a couple of the races alone and wasn't too thrilled with the flat, tarmac covered courses. Not sure if they have one at the offroad course near Farmhouse bunker but that would be a good start.

justinlynch3 pretty much nailed it. I also prefer AWD on most tracks so I usually choose my Nero Custom over my Vagner but the Vagner is really good on some tracks. The XA-21 & the Tempesta are also good AWD supers.
Sports you do need the Pariah, even though I don't love it's handling, it's speed is near the supers. Shoutout to the Feltzer though, handles pretty nice and is dirt cheap ($145k).
For muscles I like the Sabre Turbo Custom, but none of them handle well imo.
In sports classics the Turismo Classic is the goat. They are all RWD and a little slippery if you miss-judge a corner. My friend swears by his Rapid GT Classic but I don't have one so I can't speak to it.
Sedans are dominated by the Shafter V12 & it handles pretty nicely.
For compacts I agree that the Brioso's handling is trash. My favorite is the Panto, just really used to it now I think.
I go with the Sanchez for off-road, but sometimes it will get wrecked by the trucks. If you want a truck I'd say Kamachco.
In bikes I never liked how the Shotaro handled. I always go with my Bati or sometimes my Hakuchou if I'm confident. Wheelie's are a must though, so I guess if you prefer leaning forward, Shotaro is the way to go.
The Kamachco is nice but I think the Trophy Truck is more practical to own. It's zippy around corners, decently fast, and if this guy is going to be doing any transform races, the Trophy Truck is a vehicle that actually shows up quite often in those.
btw how annoying is it that Rockstar added the RC races to the SA series. I go to have a bit of fun in a Demolition Derby race (lets face it, you can't really call them Nascar races) and all I join is stinking RC races.
I quite like the handling for the new Deveste it kinda handles like a boat but occasionally can flick out into a controlled drift/power slide
I picked one up and went on a few tracks with it. It's a bit squishy in the ass around corners and seriously lacks confidence. The power slides are fun when you initiate them but that's not always the case. It's fast but you have to be on your game every second and hope there's not an ant or a pebble on your line.
