Was curious what I should invest into in terms of 'fun' cars to drive. I'm not necessarily looking for something META, but instead something that simply clicks or feels good to drive around in.

Really depends on what you consider fun. There are plenty of cars that are fun to drive as in a drifting type of car. I think the Omnis is one of the best to drive around, it just slides around corners. Ant Muscle car in my opinion is super fun just because they are a little more challenging!
So my list would be-
Omnis Turismo Futo Vigero

I thought about dropping the money on a Futo, since it is a pretty cheap option. Also kinda makes me think of the Initial D vibe as much of a meme that is. Thanks for the input!

I cant really give any advice on a "fun" car. Any car is fun if it can provide good battles. (Except for the brioso. Fuck the brioso. Dont @ me)
I usually go to cars that are more focused on speed than handling. They make you work more on your line through corners and reward you later down a straight. Cars like:
Massacro
Dominator
Cheetah Classic
Banshee 900r
Of course "fun cars" are subjective and everyone has their own preference.

Zentorno is very fun if you can tame it.
Specter Custom, Massacro, Comet SR, Buffalo S, Jester
Yosemite, Brawler, Hustler and Kuruma are fun if you know the braking trick with them.
Bifta
Stinger
Stirling GT is really fun on bumpy city tracks and rally tracks.
Serrano, Huntley S (SUV)
Panto, Prairie, Blista

The Mamba that you get with the Business Battle is a lot of fun. It's better when you don't have aim-bot NPCs chasing you and filling you with hot lead from a half mile away but whatever.

Already mentioned but Omnis is much fun on rally tracks. Pretty easy to make scandinavian flick with it.
