So I had a go on the 5M server, and predictably got my plums handed to me on a plate. One thing that will improve things a lot is knowing the tracks. Is there a list or order of tracks I should know, or is it just a case of "all of them"? There's a lot on the test server to learn.
Also: purchasing custom cars. I need to do this right? Races are typically in custom vehicles?

Tbh the only proper way to learn tracks is to just keep racing on them. Watch what other people do, try to copy them, and see what works and what does it to try to get a lower lap time.
Project Homecoming is great because theres almost always racing and you'll quickly learn which tracks are played more than others just by what people host.

Thanks Bturx. A bit annoying for others when I'm at the apex at half the speed they expect though I felt a bit like a rubber duck in a shipping lane at times.

Learning tracks is nice but I would say prioritizing learning how to drive in unfamiliar territory is a more valuable skill. Keep your eyes open and look for the direction the arrows are pointing, a good track creator will place the checkpoints in a way that will guide you through the corners. If you see the double arrows pointing straight to the right, you can safely assume you're coming up to a decently steep corner and you should brake accordingly. Watching the cars in front of you and following their cues is also a good way to learn tracks faster, instead of crashing and burning yourself you can just watch others do it so you know not to

It's not about learning the tracks as there are literally 100s of tracks across retail and 5M. If you learn the gta map corners and look in to being able to predict where the track is going that is how you get faster and cleaner.

Thanks Prismide! The videos are useful on there. So smooth and on the edge. Must be with a wheel, right? I did get my wheel going, then it broke for some reason.
I can't find any of the tracks on Project Homecoming though, are they there or am I being thick? I've taken to practising the ones that are used on Broughy's videos as that's not a bad starting point I guess

We all drive on gamepads as it's faster and easier to control cars on GTA with flicking a dual stick. And those tracks may not be on project homecoming. I'd just recommend joining the main server on homecoming and learn the tracks that way.

Ok Prismide, I'll keep on grinding with the stick, cheers. I'm getting less terrible.
If any other suckers are reading this, a good method I've had is watching the gamepad button overlay on some videos. I've changed my technique, less braking and more flicking as you say.
