For me, it's Need For Speed from Underground to Carbon, and Burnout 3 onwards. I loved the customisation of the former (saddens me that we don't have tuners in GTAV yet!) and the sense of speed of the latter, and the open world in Burnout Paradise was insane. Kind of sad that the DLC for Paradise isn't available on PC as far as I can tell.
If we're including Kart racers, include Crash Team Racing and Crash Nitro Karts.
Also rally games like the Colin McRae series and stuff.

Showing my age a little here but the first racing game I played was Jaguar XJ220 on the Amiga 600. Horrible game by todays standards but it was addicting as hell and seeing as the only other game I remember having at the time was The Adams Family it was all I played.
Don't remember doing much racing on the Mega Drive but I enjoyed the Daytona USA games for the Sega Saturn (yes I was one of 'those' kids) and I went through the Destruction Derby phase on PS1 too.
Toca Touring Cars was the game that cemented me as a lover of racing simulations, I remember all the cars being just like the ones I watched on ITV every Saturday and finally feeling like I was part of the real thing.
Gran Turismo, of course, blew my mind and I spent forever playing it.
I don't seem to have the patience anymore for F1 simulators, last one I owned on the Xbox 360 was the 2012 game and I didn't get very far with it, Forza has been my go to racer for years now I just wish there were more 'made up' tracks to choose from.
Would probably say the original Gran Turismo was my favourite racing game ever just because it tread so much new ground and kept me playing for very long periods of time for a very long time, it was also the only racing game where I really felt like the endurance races were REALLY endurance races and you really had to be tactically prepared for a 2+ hour fight that could be lost at any time or on the last lap.

As clearly evidenced by my name, I love racing and driving games. I love them because I can't whip my shitty vehicle 100 mph around a turn and flip it 73 times and keep driving. There's something so joyful about driving fast. The anticipation. The thrill of danger. Not knowing what's ahead. And the fear of smashing into something. I don't know, the adrenaline it gives you is something else! Unfortunately, I can't do it a lot in real life but can certainly get my fix in video games! _____

My favourite racing games from the past must certainly be Forza Motorsport 2 and also the pgr games! I must have put hundreds of hours into those games, pgr4 especially.

I rented 2nd Offense one weekend, for some reason I just couldn't stand playing it, went back to the first Vigilante 8.

Before I got my first console I had a little arcade racing shenanigan when I was 7. I was invited to a friend's birthday party to go to the arcade(Playdium for those curious). I split off from the rest of the kids sat myself in one of the racing seats and just camped there waiting for people to go on another machine so I could race against them. It was fun winning some and losing some especially when the other kids didn't realize it was me beating them.
Got my first console which was the N64. Started out with Mario Kart. Pretty much my go to racing game for the longest time. I also loved playing Rush 2: USA. Then my cousin introduced me to F-Zero X.
F-Zero GX became my favorite racing game when it came out on the Gamecube and it still is. (My status says so.)

I loved Trials Fusion on my old Xbox 360 and considered re-buying it for my PS4 but GTAV and now Dirt Rally are taking up all of my game time.

World Racing 2 anyone? I loved this when I was young, mainly because it's an open world game. There are a few, quite large maps to explore, a good amount of vehicles and a fun career mode. There are also tons of mods which I somehow managed to install as a 12-ish year old, and new ones still being released today pretty regularly. The developers even released an official patch to run it on windows 7, even though the game was released in 2005. It somehow caused bluescreens on my windows 7, so I wasn't able to play it in years, but I might give it a shot on Win 10 again. I also recall playing Colin McRae Rally 2 a lot, but that's way further back, so I don't really remember anything from that game. I just know that I loved it. Other than those two, I played Need for Speed Most Wanted and Crash Nitro Kart on my Gameboy Advance. I wasn't allowed to own consoles, but played some Gran Turismo and Need for Speed on a friend's PS2. No Idea wich ones though. I played Trials Evolution Gold Edition a lot, when it was released on Steam and later Trials Fusion. Never got into the second one that much though.
