I'd love to do it, but the only thing I have capable of off-roading is the Bifta.

Glad to see some interest A Bifta isn't really something that could rock crawl but it doesn't matter so much. The vehicle used depends on the route we decide take. Obviously something with greater ground clearance is recommended. I'm guessing you're garages are both full drummerloin :/

Funnily enough, I've just bought a second garage so I can now look into getting something for this. I'm thinking a nice big, over-the-top Sandking XL, but would you prefer an SUV or a more humble off-roader such as the Mesa?

Anything goes tbh as long as its got good ground clearance. The Sandking is of course an excellent choice. It might not have the speed and power of a Dubsta 6x6 but many overlook the fact that it has a better wading depth, so can cross rivers with a lower chance of the engine cutting out. It's also more predictable when rock crawling than a 6x6 I'm lead to believe.
Go with whatever you feel you like the most. A fully upgraded Mesa is still very competent off-road. I'm thinking of using either of the two cars pictured above, though I do own a Sandking XL.

Got myself a Sandking so I'm all set for this. Let's see if we can drum up any more interest.
