When I'm travelling at high speed towards a fairly tight corner, is it worth just rolling until you can hit the throttle or just going in as fast as possible and hitting the brakes at the last moment? I just want to know to improve my lap times.

Approach the corner from the outside, brake when you're still straight (never brake when you're turning or very little). Than use the throttle or brakes to adjust your speed for optimal speed through the corner, try to get as close as possible to the apex and exit to the outside. Hope it helped you with improving your lap times

The Zentorno will four wheel slide under braking making hairpins a lot easier. Whereas the Turismo won't break traction under braking.

In real life racing zenzi is right, but the driving mechanics for GTA aren't like real life so like kelevera said, cars like the zentorno can brake while turning.

I didn't specify for a certain car, it's the most common and right thing to do in general. If you'd look at every single car you'd need to write a book. And since he asked for some help, meaning he hasn't discovered it himself I said the standard racing line for corners.
Take the zentorno, if you brake with it before a 90° corner it will slip a lot and lose some speed to control it, but if you would have role in that same corner you can floor it immediately.
In general: out-in-out, brake on the straight, throttle when straightening car.
