Here is a race making guide, for a similar game (Multi Theft Auto) that map admins use to evaluate submitted maps at TeamSKC Race server. Some parts are the same as in GTA:O, some are quite different, but you can still get the broader picture (e.g. whereas in MTA you can increase/decrease width of cps, in GTA:O you can use Primary and Secondary cps for a wider corner).

how are they making the signs so big in races? I see the Junk energy sign like huuge!! With the Junk Energy one I'm guessing you mean the one I'm gonna explain. Go to the Stunt Track category then scroll across to near the end where you'll find the 'Track Obstacle Centre' prop. Just sink that into the ground so only the sign part shows.

If you don't know how to publish a job without testing it (i.e. gfred), here is how: Is this tutorial outdated or is it just me having issues with uploading untested maps?

any advice on how to make the tracks so that they don’t have too many long straights but the corners aren’t constantly being thrown at you, making you go at 30 mph, my corners always end up being really long and fast not requiring any skill. Also would you suggest I use stunt track in the sky or use a good area of road around the map. Any help would be useful, I’m new to this and want to get better.

Just make a track with different corners and some decent length straights. A longer straight with a sharp corner after it usually provides a nice overtaking opportunity. The best tracks are usually a combination of normal roads and stunt pieces.
